  1. In large mixing bowl, combined corn, peas, jicama, celery, green onion, and sweet pepper.
  2. For dressing:, in a screw-top jar, combine vinegar, brown sugar, parsley, salt, and pepper. Cover and shake well. Pour over salad. Toss gently tocoat. Stir in fresh mint. Cover and chill up to 2 hours.
